Shouldn’t be a problem. Any unprocessed dry sugar will do.

There are exceptions.
It boils down to the individual’s financial situation.
If you have the finances to spend on organic products, go for it.

No just tried to extract the essence osmotically using brown sugar. Usually the addition of makgeolli is for rehydrating dry herbs to make OHN.
I’m hoping to find an answer to possibly using salt instead of sugar.

The clear snot is likely a bacterial growth that is definitely not supposed to be in your cinnamon and vodka. I think it might be related to the type of sugar you used, did you use brown or light brown sugar, or did you use refined white sugar? Also did you keep your implements and bottles clean when making the inputs from start to finish?

I attempted this recipe using whole organic bananas. A few days later I had a black mold growing on top and decided to start over. Being that i bought the bananas from the store Im guesing that maybe I should have washed the banana prior to mashing them up (skin and all) to clean off any residue that or contaminants on the peel. Am i on the right track with this?

At room temperature (68-72F) it will take 10 days, at 80F it takes about 7 days.
