Frozen LAB


My LAB culture froze recently. I imagine it would compromise the cultures, but maybe I stand to be corrected? Anyone had any experience with this happening?

    Growtulsa, I saw this from a gov study: Based on the acid resistance data, selected cultures were tested for long-term survival in a simulated acidified refrigerated cucumber product. We found that one of the most acid resistant strains (Lactobacillus casei) could survive for up to 63 DAYS at 4 ยฐC/39F without significant loss of viability at 108 CFU/mL.
